From the bar at Simon Pearce.
1¼ oz Glenlivet 12-Year Scotch
1¼ oz Cynar
¼ oz Amaretto
2 dashes Bitter Truth Grapefruit Bitters
5 drops saline tincture:
½ tsp flake salt
2 Tbsp water
Grapefruit peel to garnish
To make the saline tincture, dissolve flake salt in the water.
Combine all ingredients in a mixing glass. Add plenty of ice and stir briefly.
Strain into a small Woodstock Tumbler.
Twist the grapefruit peel over the drink to release its oils and use it to trace the rim of the glass before dropping it in.
